(rooster crowing) (hip hop beat) Why breakfast, what is it? Clearly you're a morning person! - It's so good, so good. - She's bright andvibrant, and I'm not even awake before, like, 1o'clock in the afternoon. - I'm dying. - So it sort of was a mix of,like, one, I love the cuisine. I love making peoplefeel taken care of, and I like being morecasual and more open. - I'm never disappointed. - Food is delicious,the coffee's great. - It's a verycommunity-oriented place. - You guys have actualmenu that encompasses and empowers people withdietary problems, people with- - I'm that person. - Did you want thevegan sourdough bread? - Serving a lot ofgluten-free, vegan, alternative vegetarian,is, it's just part of that. - What would you sayis your best seller? - A little on the nose,it's called The Best Seller. It is our cheesy herbbiscuit, our house made bacon jam on it, which islike a spreadable bacon. It is delightful,if you do eat meat. - That hits all, all the bases. - It's getting there,but then we came out with The Bestest Seller, becausein addition to all those components, it hasour house-made sausage scrambled into the egg. - That's the kind of community I wanna belong to, right there. And I can get behind that, and I will supportthat community. First thing that wentthrough your head when you took yourfirst bite into that? - Cheesy biscuit, delicious. - That's a great foundation. - All the ingredientsare top notch. - Two kinds of cheddar,that's actually a vegetarian biscuit, butit has the umami flavors of meatiness in it for evenpeople who don't eat meat. This is our housemade pork sausage. It's an english style sausage. - This is, like, alittle breakfast portion that my mom would sendme off to school with. (school bell ringing) Like, in a little premadething, with a little note on there saying, "Whenare you gonna move out?" - Look at that, skills. And if you flip it too much, now you're losingprecious sausage. - Well that was off-cameraso you didn't see that. One piece did fly out, sothank you for that, Christine, for sharing that with everyone. Oh yeah. - You're just gonna belifting and allowing the egg to kind of fold underneath, 'cause what we're lookingfor is a foldable, little bit gentle, gentle. There we go, yeah, there we go. Look at that. Then you're gonna season it with our southernblend of seasoning. You know the moment of truth. Now you're gonna flip it. Pop that little suckerright into Sally. - Sally's short for salamander. If you wanna get super,super, like, friendly with it, it's Sal. What is this? - That's gonna bea spreadable bacon. It's cooked downwith onions, honey, and it's literallyjust, spreadable bacon. - Do you wanna let that sink in? Bacon jam. - Now we have ourgarlic chive mayo. Then, you're gonna come backover here, trusty spatula, and you're gonna fold it once, andthen fold it again, because, really we're gonna slidethat right onto the sandwich. - All that's missing,couple cups of coffee, something for you to eat, anda table for us to enjoy it at. - Perfect. - [Elliott] It's fun to justpeople-watch other people trying to takethis sandwich down. - Yup, I mean, youhave a big mouth. - I appreciate you noticing.
